sweet potato and feta salad

This is one of my favourite summer meals. The original recipe was in Good Food Magazine but I think this version is also good, so I combine the two. I needed to save some carrots so I added them, too. As well as baby spinach, it's nice with mixed salad leaves or rocket, and you can use any nuts, really. If you can't find sweet potato you can use roasted pumpkin and if you don't like feta you could substitute that with grilled halloumi. What's your favourite summer salad?

That looks fantastic! I don't have a favorite salad really...I just eat plain spinach with raspberry dressing. My food preparation isn't very inspiring :(

Maybe I'll try something like this tonight!

Mmm. I love Feta! This looks delish. I love a fresh corn salad. Sweet Corn, feta cheese, cilantro, chopped tomato, chopped red pepper, oil, vinegar, salt & pepper. Mmm. yum :)

Yum, looks delicious!! Will definitely give this a try. One of our summer staples is watermelon with feta, salty, sweet, refreshing.
